Happy Monday guys! Getting up for work this morning was a struggle…but the weekend will be here again before we know it!
Anyway, over the weekend I decided to try out a easy meal for dinner. I’m not the most….experienced cook, but since I’ve been living on my own I’m trying to step up my game. My boyfriend picks on me because he is definitely the cook in the house, so when I told him I wanted to make dinner and blog about it he laughed. He’s just so sweet! Either way it turned out yumy and I’m proud of myself! It was a chicken breast dish that was sweet and savory (thanks to the honey and mustard!). I highly recommend it. It was very easy to throw together and put in the oven. I am always looking for new dinner ideas that are quick because I don’t get home until 6pm after work. I don’t want to come home and make an extensive meal at 6pm 😊
You’ll need to following ingredients:

2tbs olive oil 2tbs butter, melted 2tb honey, 2tbs brown sugar 1tbs Dijon mustard 1/2tsp of oregano 1/2tsp basil salt and pepper for taste 4 boneless skinless chicken breasts 24oz broccoli, 5 potatoes, cubed
1. Preheat oven to 400°F. Coat the baking pan with oil or nonstick spray. If you want easy cleanup, I put tinfoil down first and put the nonstick spray down.
2. Mix oil, melted butter, honey, brown sugar, Dijon mustard, oregano, basil, salt and pepper, in a small bowl. Put chicken breasts and potato pieces on baking sheet and drizzel the mixture over the chicken first, then the rest on the potatoes. You can use it all on the chicken, but I liked it on both!
And that’s it! Told you it was easy and painless! I would recommend making a little more of the sauce mixture if you like sauces…I probably will next time!
